Muesli Slice

Looking for a yummy arvo snack, or even something a bit different for breakfast? This muesli slice will hit the spot. It’s naturally sweetened with fruit and dairy-free.

 

INGREDIENTS

  • 1 cup (150g) pitted medjool dates 
  • 1 apple, peeled and cored
  • 1/4 cup oat milk
  • 3 tbsp (45g) coconut oil
  • 1/2 cup mixed seeds or nuts
  • 1/2 cup (40g) shredded coconut
  • 1/2 cup (45g) oats
  • 3/4 cup (90g) spelt flour
  • 1 egg
  • 1 tsp baking powder 

 

DIRECTIONS

  1. Preheat your oven to 180C. Line 9x13" slice tin with baking paper and set aside. 
  2. In a food processor, add your dates, apple, milk and coconut oil and process until almost all of your dates and apple are completely broken down (it's okay to have some chopped chunks - this just adds texture in the final bars!). 
  3. Add in your mixed seeds/nuts, coconut, oats, flour, egg and baking powder and mix until combined. 
  4. Pour your muesli slice mixture out into your prepared tin and smooth with a wet spatula or fingertips to form an even layer. 
  5. Bake for 10-15 minutes or until your slice is golden and firm to the touch. 
  6. Allow to cool before slicing and serving. 
  7. This slice will keep in the fridge or in an airtight container at room temperature for 3-4 days and can also be frozen to defrost and enjoy later on.
