DF & GF Lasagne

Lasagne still in a stainless steel baking pan

My youngest requested Lasagne for dinner the other night - and this is what I whipped up! Gluten-free & dairy-free & delicious 🙂

 

Ingredients

BEEF BOLOGNESE:

  • 1 tbsp olive oil
  • 1 onion , finely chopped (white, yellow or brown)
  • 2 garlic cloves , minced
  • 1 kg beef mince (ground beef) 
  • 400g can crushed tomato
  • 1/4 cup tomato paste
  • 1 cup bone broth (or stock) 
  • 2 tbsp fresh basil
  • 1 tbsp coconut sugar

 

“CHEESE” SAUCE:

 

LASAGNA:

  • 250g gluten-free lasagna sheets 
  • 1/2 cup nutritional yeast 

 

INSTRUCTIONS

BEEF BOLOGNESE:

  1. Heat oil in a large heavy based pot over medium heat. Add garlic & onion. Cook for 10 minutes until softened and sweet.
  2. Add beef, turn heat up and cook the beef, breaking it up as you go.
  3. Once the beef has all turned brown, add the remaining ingredients.
  4. Stir then adjust the heat so it is bubbling very gently. Place the lid on and cook for 30min, stirring every now and then.

“CHEESE” SAUCE:

  1. While beef is simmering, make the Creamy Pasta Sauce (DF)

ASSEMBLE:

  1. Preheat oven to 180°C.
  2. Use a 33 x 22 x 7 cm baking dish.
  3. Smear a bit of beef on the base, then cover with lasagna sheets. Tear sheets to fit.
  4. Spread over 2 1/2 cups of beef (enough to cover sheets), then drizzle over 1 cup of “Cheese” Sauce. 
  5. Continue layering until all ingredients are used, ending with a layer of “Cheese” Sauce.
  6. Sprinkle with nutritional yeast, then bake for 25 minutes or until golden and bubbling.
  7. Stand for 5 to 10 minutes before cutting and serving.
  8. Serve on it’s own, or with a fresh salad or steamed vegetables.
