Zucchini Bread

I was pretty chuffed when I created this Zucchini Bread recipe that is low-histamine friendly! This zucchini bread is only slightly sweetened with some raw honey, so you can enjoy this as a sweet treat or a savoury snack or part of a meal. I’ve used aquafaba in this recipe in place of eggs (gaaaaah, best egg-replacement ever!!!). To make aquafaba, all you need to do is drain the brine from a can of chickpeas, and whip it up until it looks like egg-whites.
 
INGREDIENTS
  • ½ cup raw honey
  • 1 cup coconut oil, melted
  • ½ cup aquafaba
  • 1 tsp vanilla
  • 2 cups grated zucchini
  • 1 cup buckwheat flour
  • ½ cup arrowroot starch
  • ½ cup coconut flour
  • 1 tbsp ground ginger
  • Pinch salt
  • 1 tsp baking powder
 
INSTRUCTIONS
  • Pre-heat your oven to 200C.
  • Combine the wet ingredients, then the dry, then mix them in with each other.
  • Pour into a loaf tin and bake for about 45 minutes, depending on your oven.
