Witch's Cauldron Stuffed Bell Peppers

Whip up some Witch’s Cauldron Stuffed Bell Peppers for a spooky and nourishing Halloween dinner! These vibrant, veggie-packed peppers are perfect for a healthy, adrenal-friendly meal that’s gluten and dairy-free.
Ingredients
- 4 large bell peppers (green, orange, or yellow for Halloween colours)
- 1 cup quinoa (cooked)
- 1 cup black beans (cooked)
- 1 small zucchini (diced)
- 1 onion (diced)
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil Sea salt & pepper to taste Fresh coriander (optional for garnish)
Instructions:
- Prep Peppers: Preheat oven to 180°C (350°F). Cut the tops off the bell peppers and scoop out the seeds.
- Cook Filling: In a pan, heat olive oil and sauté the onion and zucchini. Add cumin, paprika, salt, and pepper, then stir in quinoa and black beans.
- Stuff Peppers: Fill the peppers with the quinoa mixture and place them in a baking dish.
- Bake: Cover with foil and bake for 25-30 minutes until the peppers are soft.
- Serve: Garnish with coriander if desired. These stuffed peppers are rich in protein, fibre, and nutrients to fuel your energy throughout the day!
