Turkey and Kale Breakfast

Dinner for breakfast - yum! Here's a quick and easy meal that will kick-start your body with fuel to conquer the day! It's also SIBO & Low-Histamine friendly, for those of you currently working through gut healing 🍽️✨

 

Servings: 2

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Ingredients:

  • 250g cooked ground turkey
  • 2 cups sautéed kale with Spring Onion (see recipe below)
  • 1 cup sliced cucumber
  • 1/2 cup sliced radishes
  • 4 cups kale leaves, washed, stems removed, and chopped
  • 2 tablespoons spring onion (green part only), finely chopped
  • 1 tablespoon olive oil Salt and pepper to taste  

 

Instructions:

  1. Heat coconut oil in a large skillet over medium heat. Add chopped kale and sauté for 3-4 minutes until wilted but still vibrant green. Add Spring Onion and season with salt and pepper.
  2. Sauté for an additional 1-2 minutes. Remove from heat and set aside. Divide the cooked ground turkey evenly between two serving bowls. Top with the sautéed kale with spring onion (green part only). Arrange sliced cucumber and radishes around the bowl. Garnish with additional Spring Onion if desired and spring onions (green only)
