Strawberry & Oat Cookies
May 13, 2026
I picked up a kilo of beautiful local strawberries the other day for $5 - winning! They were “seconds”, but pretty much perfect to me. We ate lots as they were, but I also did some baking. Including creating these sweet pink cookies 🙂
Ingredients
- 1 cup strawberries, hulled and quartered
- ⅔ cup coconut yogurt
- ½ teaspoon lemon juice
- 1 egg
- 1 ripe banana
- ⅓ cup coconut sugar
- 2 cups oat flour
- 1 cup oats
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Heat the oven to 180 C. Prepare a baking tray with baking paper.
- In a blender or food processor, combine egg, banana, lemon juice, yogurt, salt, baking powder, baking soda, coconut sugar and oat flour.
- Blend until ingredients are fully combined then transfer the dough to a mixing bowl and carefully fold in the strawberries and oats.
- Use a small dessert spoon to drop a heaped spoonful of batter onto the prepared baking tray.
- Bake 15 minutes until the edges of the cookies are just beginning to brown.
- Remove from the oven, transfer to a wire rack to cool completely.
- Keep cookies in a container in the refrigerator for up to one week.
