Spinach Fritters

Here’s a great way to get more GREEN into your diet! These little fritters are lovely as an appetiser, as part of a main meal, snack or even breakfast. Packed with vitamin C, iron, magnesium and vit B6 - yum :) 

 

Serves: 6

Ingredients

  • 500g fresh or frozen (thawed) spinach, chopped
  • ½ onion finely chopped
  • 1 tablespoon fresh garlic minced 
  • 3 large eggs
  •  ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ cup parmesan cheese grated
  • ¼ cup almond flour
  • ¼ cup coconut flour
  • ½ cup buckwheat flour
  • 4 tablespoons olive oil for frying

 

Instructions

  1. Place the spinach, onion, and garlic in a large bowl and mix together.
  2. Add eggs, salt, pepper, parmesan, almond flour, coconut flour and buckwheat flour to the spinach mixture, and mix well to combine.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Scoop heaped tbsps of mixture into skillet and press down gently to flatten. Cook for 3-4 minutes on each side, until well-browned and crisp. 
  5. Drain the fritters on paper towels, then pop on a baking tray and place in a warm oven to keep them warm, while you cook the other fritters.
  6. Once all done, serve immediately.
