Self-Saucing Carob Pudding

So I was craving self-saucing chocolate pudding the other night. It was a childhood favourite, and I hadn’t had it in aggges. I wanted to create a “healthier” version, so I was in the middle of putting the ingredients together than realised we had no cacao powder left (note to self: check I have key ingredients before starting the recipe, lol!). Anyways, I did a quick pivot and used carob powder instead, and my oh my this was a hit with Chris and the kids! (You can thank me later). 

Ingredients

  • 160 g coconut - melted
  • 1 cup almond milk
  • 2 large eggs
  • 4 tsp baking powder
  • ¼ cup coconut sugar
  • ¼ cup carob powder
  • 1 cup almond meal
  • 1 cup buckwheat flour

 

For the sauce

  • 1 cup pure maple syrup
  • ¼ cup carob powder
  • 2 cups boiling water

 

Method

  1. Preheat your oven to 180º C (fan forced). Grease an 8 cup capacity ovenproof dish.
  2. In a food processor mix together the melted coconut oil, milk, eggs, baking powder, coconut sugar and carob powder until frothy and very well combined. 
  3. Fold through the almond and buckwheat flour gently until just combined (don't over-mix or it will become rubbery). 
  4. In a large jug, dissolve the pure maple syrup and carob powder in the boiling water.
  5. Place the cake batter into the oven proof dish.
  6. Slowly pour the sauce over the back of a large metal spoon to cover the cake mix.
  7. Place your dish on a tray in case the sauce bubbles over and bake for approximately 30 minutes.
  8. Serve hot out of the oven with coconut cream or double cream and berries.
