Seafood Coconut Soup

Are you on our Anti-Candida Healing Nutrition Plan and looking for a compliant-friendly meal to spice things up? Give this delicious soup a try! I made this the other week to take to a family pot-luck dinner, and it was an absolute hit. 

You don't have to go deprived when trying to squash Candida! This soup can also be loving devoured on our Adrenal Healing Nutrition Plan. See below for how to sub ingredients for our other nutrition plans. 

(Funny side story...I've actually tried making this soup in our slow cooker. But it wasn't cooking in time, so I grabbed the ceramic slow cooker pot and chucked it on our gas stove and cranked up the heat. DO NOT DO THIS...EVER! After about 5 minutes, the ceramic pop CRACKED clear around the whole pot and the soup started seeping out onto the stove. GAHHH!!! Lol. Lucky I heard it and was able to salvage/scoop most of the soup into another (gas-stove-friendly) pot to continue cooking. You could cook the soup in a slow cooker - but would need to give it about 7 hours). 

 

Seafood Coconut Soup

Serves 4 (double so you have enough for meals the next day or two! Doing a bit of bulk cooking will be an absolute saviour on the Anti-Candida plan)

Ingredients

1 tbsp coconut oil

1 brown onion, finely chopped

2 tsp, fresh ginger, finely grated

1 tsp ground turmeric

3 cups bone broth

450g pumpkin, peeled and cut into cubes

440ml can coconut cream

1 bunch asparagus, cut into 3cm pieces

500g seafood marinara mix

1 tbsp coconut aminos

1 bunch bok choy, cut into quarters

½ cup fresh coriander

Method

  1. Heat oil in a large saucepan over medium heat. Cook onion for 3-4 minutes or until soft but not coloured. Add ginger and turmeric and cook, stirring, for 1 minute.
  2. Add broth and bring to the boil. Add pumpkin and cook, covered, for 5 minutes. Add coconut milk, asparagus and seafood. Bring to a simmer. Season with coconut aminos and add bok choy.
  3. Divide between serving bowls and top with coriander.
