Prawn, Avocado & Pineapple Salad
Sep 04, 2024Who is excited that Spring is here?! To get into the warmer weather spirit, I whipped up this delish Prawn, Avocado, and Pineapple Salad. Bring on summer!!! ;) Not only is this salad delicious, but it’s also approved for the Adrenal Diet—great for keeping those stress levels in check. Give it a try and let me know how your family enjoys it!
Serves 4
Ingredients
- 500g cooked tiger prawns, peeled
- 2 garlics, thinly sliced
- 1⁄4 pineapple, thinly sliced
- 200g baby spinach
- 2 avocados, cut into wedges
- 100g baby tomatoes, halved
- ½ bunch fresh parsley, finely chopped
Dressing
- 60ml (1⁄4 cup) olive oil
- 1 lime, juiced
Method
- Panfry prawns and garlic in a pan on medium-high for 3-5min, until golden brown. Put aside in a bowl.
- In same frypan, fry the pineapple for 3-5min, or until golden brown.
- Arrange all the salad ingredients in a bowl and add prawns, garlic and pineapple to the salad.
- Mix the olive oil and lime juice, and pour over salad
