Paleo Cherry Pie

It’s cherry season!! I bought some seconds from the local market & what better way to use them up then to make Cherry Pie! This is a grain-free, dairy-free paleo version & is delicious! 

 

INGREDIENTS

Pastry

  • 100g coconut flour
  • 100g arrowroot
  • 2 eggs, beaten
  • 60g coconut oil
  • 2 tbsp xylitol
  • pinch salt
  • Water, as needed

 

Filling

  • 3 cups fresh cherries, coarsely chopped and pitted
  • 1/4 cup xylitol
  • 2 tbsp buckwheat flour
  • ¼ teaspoon cinnamon
  • Pinch sea salt
  • ½ Tablespoon lemon juice
  • 1 teaspoon vanilla

 

Directions:

  1. Make the pastry. Place all ingredients (except the water) in a food processor and blend until the mixture forms a soft dough. If it is too dry add a splash of cold water, until the dough is a consistency that clumps together.
  2. Wrap the dough in cling film and chill for 30 minutes.
  3. Preheat the oven to 180C.
  4. Use two sheets of greaseproof paper and roll out the pastry large enough to fill a pie dish. Line the pie dish with the pastry and trim the edges. Reserve the remainder pastry to make the lattice top.
  5. Make the pie filling. In a large bowl mix together all ingredients until combined. 
  6. Tip the pie filling into the pie then roll out the remainder pastry and use a knife to cut long strips of pastry. Place on top of the pie to create a lattice. The dough is normally soft enough to stick on the top but if not you can brush the pastry with a little beaten egg.  Brush the lattice with beaten egg as a glaze.
  7. Place the pie in the oven and bake for 30 minutes until golden brown and bubbling.
