Mushroom Sauce

Mushroom Sauce (dairy-free)

School holidays here in Tassie! My niece came to stay, and she requested MUSHROOMS for dinner (hehe - cute, hey?!). So I made this mushroom sauce to have with homemade gluten-free gnocchi. The sauce was delish! The gnocchi was a bit of a flop though (I couldn’t get the consistency right - gah!), hence I’m only sharing the mushroom sauce pic, haha. 

Ingredients:

  • 500g mushrooms, sliced
  • 1 Tbsp. olive oil 
  • 6 cloves garlic, chopped
  • 2 C. oat milk
  • 2 C. vegetable broth 
  • ¼ C. arrowroot 
  • ¼ C. nutritional yeast
  • 2 tsp. lemon juice
  • 280g baby spinach
  • Salt & pepper to taste

 

Instructions

  1. Add the olive oil to a cast iron skillet and heat on medium high. Now add the mushrooms and garlic. Saute until the mushrooms are cooked through. About 5-7 minutes. Season with salt and pepper. 
  2. Mix together the veggie broth, almond milk and arrowroot in a bowl. Whisk until fully combined and arrowroot has dissolved. Now add to the mushrooms. Reduce to medium low and simmer for about 5-10 minutes until it has thickened. Now add the nutritional yeast, and lemon juice. Whisk. Season with salt and pepper. 
  3. Now add the spinach and stir, just cook until the spinach has wilted. Reduce heat to low. Taste and adjust seasoning. 
  4. Serve with gnocchi, pasta or rice.
