Homemade Baked Beans

We made “Jacket Potatoes” the other night (or what we call in our family “Mr Spud” - anyone else call it this?!), and among other toppings, I whipped up this yummy homemade baked beans concoction.
I kept it pretty basic, but you could add in grated veggies (zucchini, carrots, etc) if you wanted to sneak in some extra veggies :)
Ingredients
- 1 onion, peeled and cut thinly
- 1 garlic clove, peeled & crushed
- 20g olive oil
- 425g can mixed beans
- 400g can crushed tomatoes
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon curry powder
- pinch of salt and pepper
Instructions
- Heat oil in a med-high frypan and add onion and garlic. Cook for 5min, or until soft.
- Add the remaining ingredients to the frypan, and cook for 10min.
- Season with salt and pepper and serve on toast or as a side dish.
