Healthy Peanut Butter & Choc Brownie
Oct 16, 2024Yum, yum, yum! There’s nothing better than a peanut butter & choc combo! Try my latest brownie creation (if you’ve been a follower for a while, you know I LOVE brownies & always experimenting with different flavours). Ingredients:
- 2 eggs room temperature
- ¾ cup coconut sugar
- 2 teaspoons vanilla
- ¼ cup (50g) coconut oil
- ⅓ cup creamy unsalted peanut butter
- ¾ cup almond flour
- ¼ cup cocoa powder
- ¼ teaspoon salt
- ⅓ cup vegan chocolate chips
Instructions:
- Preheat the oven to 180 degrees C.
- Line an 8 inch baking pan with baking paper and set aside.
- Cream together the sugar, room temperature eggs, coconut oil and vanilla with an electric mixer for 1 minute.
- Beat in the peanut butter.
- Sift in the almond flour, cocoa powder and salt.
- Fold together until combined. Fold in the chocolate chips.
- Add to the prepared pan and spread evenly.
- Add to the oven and bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before slicing, then enjoy!
