Healthy Peanut Butter & Choc Brownie

Yum, yum, yum! There’s nothing better than a peanut butter & choc combo! Try my latest brownie creation (if you’ve been a follower for a while, you know I LOVE brownies & always experimenting with different flavours). Ingredients:

  • 2 eggs room temperature
  • ¾ cup coconut sugar
  • 2 teaspoons vanilla
  • ¼ cup (50g) coconut oil 
  • ⅓ cup creamy unsalted peanut butter
  • ¾ cup almond flour
  • ¼ cup cocoa powder
  • ¼ teaspoon salt
  • ⅓ cup vegan chocolate chips 

 

Instructions:

  1. Preheat the oven to 180 degrees C. 
  2. Line an 8 inch baking pan with baking paper and set aside.
  3. Cream together the sugar, room temperature eggs, coconut oil and vanilla with an electric mixer for 1 minute. 
  4. Beat in the peanut butter.
  5. Sift in the almond flour, cocoa powder and salt.
  6. Fold together until combined. Fold in the chocolate chips.
  7. Add to the prepared pan and spread evenly. 
  8. Add to the oven and bake for 20-25 minutes or until a toothpick comes out clean. 
  9. Let cool before slicing, then enjoy!
