Finger picked bite size Rocky Road

The other day my youngest daughter went marshmallow roasting by a campfire. My oldest felt a bit gipped, so I said to her: “let’s make our own marshmallows!” This was my first experience of making my own marshmallows - and they worked out AMAZING! I used Jo Whitton’s marshmallow recipe, and then turned them into this Healthier Rocky Road concoction. Sooooo good! 

 

INGREDIENTS

 

INSTRUCTIONS

  1. Make the marshmallows first and allow to set.
  2. Then make the chocolate.
  3. Cover a slice tin with baking paper, ready to compile all the rocky road ingredients.
  4. While chocolate is cooking, cut the marshmallow into small squares and layer in a slice tin.
  5. Add the hazelnuts and blueberries to the slice tin, making sure all ingredients are layered evenly.
  6. Pour chocolate over the rocky road ingredients and place in freezer to set. 
  7. When set, break the rocky road into pieces and store in the freezer or fridge
