Goodness Pasta with Avocado + Lemon

Dinner last night came straight from Teresa Cutter's @thehealthychefofficial new cookbook, Simple Healthy Recipes. Whipped this beauty up in less than 15minutes & it was delish!

Ingredients:

  • 200g pasta of your choice (I used GF pasta)
  • 1 avocado
  • handful basil leaves
  • 1 tbsp lemon juice
  • 60 ml extra virgin oil
  • pinch of sea salt and white pepper
  • 60 ml pasta cooking water
  • 1 handful baby spinach leaves
  • 60 g Macadamia Parmesan, to serve

 

Instructions:

  1. Cook the pasta in plenty of lightly salted boiling water until al dente.
  2. Meanwhile, combine the avocado, basil leaves, lemon juice, olive oil, white pepper and pasta cooking water in a blender or food processor. Blend until smooth and creamy. Taste and adjust if needed, adding more water etc for consistency.
  3. Drain the pasta into a large servicing bowl, reserving a little more of the cooking water to use if required. Pour over the avocado puree. Add the spinach leaves and toss through, adding more water if needed for consistency.
  4. Serve topped with Macadamia Parmesan and enjoy. You can also toss through steamed green beans or dollop over little coconut yoghurt before serving.
