Ginger Root Soup
May 13, 2021If your gut is feeling stressed out & inflamed, this a lovely soothing soup that is easy to digest. The ginger root in the soup also helps to stimulate your migrating motor complex, which helps food move through the intestines.

3 cups diced carrot

2 cups of water (or bone/vegetable broth)

2 tbsp diced fresh ginger root

2 tbsp diced fresh turmeric root (or 1 tsp ground turmeric, if you can't access fresh)

½ cup coconut nut milk

1 tsp coconut oil
-
1 tsp sea salt (or to taste)

Place carrots into a medium pot with 2 cups water 9 (or broth).

Let the carrots boil for 20 minutes or until tender.

Saute the diced ginger and turmeric root in coconut oil with some salt for 5 minutes.

When the carrots are finished cooking combine all the ingredients into one pot.

Blend all the ingredients together using an immersion blender.

Season with sea salt and black or white pepper to taste.
