Coconut Rough Brownies

It’s been awhile since I’ve put out a new brownie recipe (have I mentioned how much I LOOOOVE brownies, lol?!). This one is delicious and has a Coconut Rough feel to it. Enjoy!

 

Ingredients  1x2x3x

  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 5 tablespoons coconut oil, softened 
  • 1 3/4 cups xylitol
  • 3/4 cup cacao powder
  • 3 large eggs 
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut

 

INSTRUCTIONS

  1. Preheat the oven to 180C. Line an 8 x 8-inch pan with baking paper and set aside.
  2. In a small bowl, whisk together your dry ingredients. In a separate larger bowl, whisk together your softened coconut flour, xylitol, eggs, cocao powder, and vanilla extract, until combined. 
  3. Gently add in your dry ingredients and mix until fully incorporated. Fold in coconut at the end. 
  4. Transfer your brownie batter into the lined pan. Bake for 35 minutes, or until a skewer comes out just clean. Remove from the oven and allow to cool completely, before slicing.
