Coconut Rice Pudding

- 2/3 cup jasmine rice (120g)
- 3/4 cup water (180ml)
- 2/3 cups full-fat coconut milk (160ml)
- 1-2 tsp clear organic honey
- 1 tsp coconut oil
- 1 tsp coconut butter (optional)
Instructions

Put the rice, water, honey, and coconut milk together in a pot and bring it to a boil. Then reduce it to a low heat, cover and simmer for roughly 15 minutes.

Do not stir too often and leave the lid closed!

Remove from heat, add the coconut oil and coconut butter.

If necessary add a little bit more coconut milk, depending on the desired consistency.

Put the rice pudding in a bowl and top it with shredded coconut.

Enjoy!
NOTE: Feel free to add any other toppings, that are friendly to your taste-buds and that comply to your current healing diet. Depending on what you're currently eating, it could be fresh fruits, nuts, seeds, nut butters, spices, natural chocolate spreads, cacao nibs, buckwheat, granola, etc.
