Choc Cherry Cookies

Looking for a new chocolate cookie recipe? This one ticks all the boxes! It’s fudgey, rich, and with a sweet tang with the dried sour cherries. And there’s a secret ingredient…black beans ;)


  • 400g canned black beans, drained, rinsed
  • 4 fresh pitted dates (80g)
  • 2 tablespoons coconut oil, at room temperature
  • ½ cup (50g) cacao powder
  • 2 eggs
  • ¼ cup (60ml) pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup (50) dried cherries, chopped coarsely
  • 100g sugar-free dark chocolate, chopped coarsely
  • ¼ teaspoon sea salt flakes


  1. Preheat oven to 200°C/400°F. Line two oven trays with baking paper.
  2. Process beans, dates, coconut oil and cacao until smooth. Add eggs, maple syrup, vanilla and cherries; pulse until just combined. Stir through chocolate.
  3. Spoon approximately 2 tablespoonfuls at a time onto trays, leaving 4cm (1 1/2 inches) between cookies to allow for spreading. Sprinkle evenly with salt.
  4. Bake for 12 minutes or until cookie edges are firm. Cool on trays.
