Carob & Buckwheat Cookies
Nov 27, 2024Are you carob lover or hater? I know most people are in one camp or the other. I’m definitely a lover! Carob is a great option if you’re currently quite sensitive to caffeine, and looking for more non-chocolate treat options. Carob is also great for supporting blood sugar and cholesterol levels - win win! Give these little cookies a whirl & let me know in the comments how you found them?
Ingredients:
- ¾ cup (170 grams) coconut oil
- ½ cup (150 grams) rapadura sugar
- ½ cup (150 grams)xylitol
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (240 grams) buckwheat flour
- ⅔ cup (60 grams) carob powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cups walnuts, to decorate
Instructions:
- Preheat oven to 180° C. Line a sheet pan with baking paper.
- In the bowl of a stand mixer fitted with a paddle attachment (or thermomix), beat the coconut oil, rapadura sugar and xylitol on medium high speed until light and creamy, about 4 minutes. Add the eggs one at a time, mixing after each. Add the vanilla. In a separate bowl, sift together the buckwheat flour, carob powder, baking soda, and salt. Add to the mixer and mix until just combined.
- Scoop by the rounded tablespoon onto the prepared sheet pan, and press the cookie balls down flat. Decorate with a couple of walnuts on top of each cookie
- Bake until edges are crisp, about 9 minutes. Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
- Repeat with remaining cookie dough.
- Store the cookies in an airtight container at room temperature for several days.
