Broccoli & Parsley Pasta

Got your dinner sorted tonight! This is a super tasty, zesty pasta dish that is super quick to whip up! Gluten-free, dairy-free and plant-based 🙂

 

Ingredients:

  • 2 brown onions, finely sliced
  • 2 large heads of broccoli, cut into florets, stalk chopped
  • 1 bunch parsley
  • 60 ml extra virgin olive oil, plus extra for cooking
  • 2 tbsp lemon juice
  • sea salt and white pepper, to taste
  • 60g walnuts chopped
  • 300g gluten-free pasta
  • 1 avocado, mashed

 

Instructions:

  1. Add a generous drizzle of olive oil and a pinch of salt to a large pan.
  2. Fry the onions for 15 minutes until golden.
  3. Boil a large pot of water and add a pinch of sea salt
  4. Add the broccoli and cook for 5 minutes, then remove with a slotted spoon into a bowl. Place ¾ broccoli into a food processor along with the parsley, olive oil, lemon juice, salt and pepper. Blend until combined, adding a little more olive oil or water if needed. I also love to add a few tablespoons of walnuts, which makes this pesto extra delicious.
  5. Cook the pasta until al dente, then strain, reserving 1 cup of the pasta cooking water.
  6. Combine the broccoli florets, pesto, half of the water, drained pasta, and walnuts. Heat through, tossing the ingredients together.
  7. Add the mashed avocado and toss through until emulsified. Taste and adjust seasoning if required.
