Blueberry Brownies
Oct 14, 2020Who else can't get enough of brownies?! This is naturally sweetened with blueberries, and only a touch of honey, and is delectably moist and fudgey. Yummy!
This recipe is adrenal diet (post the initial 2-Week Blood Sugar Reset) & SIBO biphasic diet (phase 2) friendly.
INGREDIENTS

2 ¼ cups almond meal

¼ cup coconut flour

½ cup raw cacao powder

1 teaspoon baking soda

¼ teaspoon salt
-
¾ cup blueberries plus more for the top of the brownie

2 tablespoons raw honey
-
⅓ cup full-fat coconut milk
-
⅓ cup coconut oil, melted
-
1 teaspoon apple cider vinegar
-
2 teaspoons vanilla extract
-
2 eggs, room temperature
INSTRUCTIONS

Pre-heat the oven to 180°C. Place a piece of baking paper on the bottom of a slice tin.

In a large bowl mix all the dry ingredients: almond flour, coconut flour, raw cacao powder, baking soda, and salt.

Using a food processor or blender, pulse together the blueberries, honey, coconut milk, coconut oil, apple cider vinegar, and vanilla extract until smooth.

Gently mix the blueberry mixture with the dry ingredients to form a batter. Mix just until everything is combined, and be careful not to over mix.

Whisk the eggs until pale and fluffy using a handheld or stand mixer, or a whisk. Pour the eggs into the batter and with a spatula gently mix to combine everything.

Spread batter evenly into the prepared slice tin, and sprinkle with more blueberries on the top of the brownie.

Bake for 20 minutes, or until a toothpick inserted into the centre comes out clean. Be careful to not over cook the brownie so that it stays moist on the inside after cooled.

Place tray on a cooling rack and allow the cake to cool for at least 20 minutes before removing it from the pan.
