Bits & Pieces Omelette

When I was growing up, and Mum couldn’t be bothered making dinner or she was going out for the night, she’d say: “it’s bits & pieces tonight!” Which basically meant we’d scrounge up anything in the fridge or cupboard that was suitable for dinner and whack it on the table to choose from. We had that type of dinner the other night, but in the form on an Omelette! Here are the ingredients I used, but you can basically chuck any vegetable, herb or protein source at your disposable :)

 

Ingredients:

  • 1 leek, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 cup shredded ham
  • 1 cup sliced mushrooms
  • ½ cup peas
  • ½ cup cubes pumpkin
  • 3 spring onions, sliced
  • 2 handfuls baby spinach leaves
  • 2 tablespoons parsley, chopped
  • ½ teaspoon ground turmeric, optional
  • 6 organic eggs or 10 egg whites, beaten

 

Instructions:

  1. Preheat your oven to 200°C (400°F) fan forced
  2. Sauté leek in the olive oil over a medium-low heat until softened.
  3. Add the ham, mushrooms, peas, pumpkin, onions and cook through for 5 minutes, followed by spring onion, spinach, parsley and turmeric if using.
  4. Pour in the beaten eggs and cook over a medium heat for 5 minutes.
  5. Transfer to your oven and finish cooking for about 10 minutes or until egg has set completely
  6. Serve hot or cold with your choice of of embellishments such as salsa verde, pesto or avocado.
