- 1/2 cup blueberries
- 1/2 cup strawberries
- 1 cup kale leaves, washed and chopped
- 1 teaspoon fresh ginger, grated
- 1/4 cup coconut milk (no thickeners)
- 1/2 cup water
- In a blender, combine the blueberries, strawberries, chopped kale, grated ginger, coconut milk, and water. Blend on high until the mixture is smooth and creamy. You can adjust the consistency by adding more water if desired. Pour the smoothie into a glass and enjoy it immediately for a refreshing delight.
