Banana Coconut Loaf

There’s nothing better than using up all those over-ripe bananas in a delish banana loaf!!! Here’s a spelt, dairy-free version, for you to give a try 🙂

 

INGREDIENTS

  • 3 large very ripe bananas
  • 45 grams Coconut Oil 
  • 1 teaspoon vanilla extract
  • 45 grams Pure Maple Syrup
  • 170 grams Spelt Flour
  • 25 grams Desiccated Coconut 
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons bicarb soda
  • 1 egg
  • 1 pinch salt
  • 30 grams oats

 

METHOD

  1. Preheat oven to 180C
  2. Add bananas, coconut oil, vanilla and pure maple syrup in a blender & blend until smooth.
  3. Add spelt flour, bicarb soda, cinnamon, coconut, oats, salt, and egg into the blender and mix until all ingredients are combined.
  4. Pour into small loaf pan and bake for 45 minutes at 180C (or until skewer comes out clean).
