Apple & Mango Crumble

Thought I’d add a nice little summerish twist to the traditional apple crumble - mangoes!! This went down a treat with the whole fam :) 

Ingredients:

  • 6 pink lady apples
  • 250g frozen or fresh mango
  • zest & juice of 1 lemon
  • 1 tsp vanilla extract
  • 2 tbsp pure maple syrup
  • 60ml water

 

CRUMBLE

  • 100g almond meal
  • 100g butter, room temperature
  • zest of 1 lemon
  • 100g arrowroot flour
  • 90g coconut sugar

 

To make the filling:

  1. Combine the apples and mangoes into a large and heavy based pot with the juice and zest from lemon, vanilla, maple and water.
  2. Cover + cook over a medium heat for 6-8 minutes, stirring occasionally until the apples have softened and collapsed. Remove the lid and allow some of the excess liquid to evaporate. You want the apples and mangoes to be in a lovely citrusy sauce. Taste and adjust the sweetness to your liking.

 

To make the crumble:

  1. Combine the crumble ingredients in a bowl and set aside

 

Assemble:

  1. Preheat your oven to 180°C (350°F) fan forced.
  2. Pile the apple and mango mixture into a suitable sized baking dish.
  3. Scatter the crumble generously over the top.
  4. Bake for 20-25 minutes or until the crumble is golden.
  5. Remove from the oven and serve with custard or Greek or coconut yoghurt.
